Tasty breakfasts to start the day right!

We all love breakfast. At least most of us. But sometimes it’s just too early to think of anything tasty to start the day with, and you might be bored of getting the same meal every day. Here are some recipes that could spice up your life! Simple ingredients and maybe you can learn some new ways to use!

 

Toast with bananas, tahini and cinnamon

Ingredients:

2 pieces of wholegrain toast bread

1 tbsp tahini

1 banana

1 tsp liquid sweetener

cinnamon

Surprise, tahini is not only for hummus! After toasting your bread, you can spread the tahini on it and put the sliced banana on top. Sprinkle some cinnamon, and the last touch is agave or maple syrup and voilà! The whole grains will satisfy you and keep you full longer than white bread. Tahini is a good fat source and will slow down the emptying of your stomach, contributing to keeping you full longer. The banana will provide the sweetness, together with some potassium and vitamin B6 and C.

Ingredients (3-4 servings)

1 cup buckwheat

3 cups water

1 cup grated carrot

1 cup plant based milk

a couple of dates or liquid sweetener

3 tbs chopped walnuts

1 tsp cinnamon

half teaspoon ginger

Put the buckwheat in a pot and bring it to boil. After boiling it for a couple of minutes, cover it and put it to the side, it will soak the water in and soften completely without boiling it. If there is any water left, drain it. Add carrot, dates, plant based milk and spices. Full of tastyflavor, fibre and nutrients.

Have you ever heard of buckwheat before? Let me introduce it to you. It is not a grain, first of all, therefore, it is gluten free. It is an inexpensive good that can be used in many different ways and can be found raw, roasted (called kasha) and in the form of flour. It contains several nutrients, such as calcium, iron, vitamin E, and vitamin B3 and B6.

 

Berry bowl- blueberries, strawberries, and raspberries with some seeds, peanut butter

Ingredients:

1 banana

1,5 cups of mixed berries

3 tablespoons of water/plant milk

chia seeds

The banana and the berries can be frozen to get an ice cream texture.

Toppings:

hemp seeds

shredded coconut

peanut butter

Grab the banana and the berries and put it in a blender. You can add some ice cubes or  water/ plant based milk of choice. Blend until smooth and decorate with some toppings. It’s going to keep you satisfied because peanut butter takes longer to digest and chia seeds make this meal filling. Berries are high in antioxidants and vitamins; and banana is a tasty source of potassium and vitamins.
