Quick Answer

These chewy tropical little cakes use leftover almond pulp from homemade almond milk — combining it with pumpernickel flour, ginger, coconut, cranberries, and honey for a fragrant, gently sweet snack that makes use of something most people throw away.

The Almond Pulp Discovery

For over a year Juan made homemade almond milk and dutifully discarded the leftover pulp every single time. Then one afternoon he realised what he had been throwing away: a moist, nutty base that was already half-prepared and begging to become something delicious. One experiment later — featuring ginger, coconut, and dried cranberries — and the cakes were born. They are chewy, fragrant, and gently sweet without being cloying.

At Life Synergy Retreat we believe that good food does not have to be complicated or wasteful. These little cakes are a reminder that a slightly inconvenient ingredient is often an invitation to be creative.

Ingredients

  • 1 cup fresh almond pulp (or safely dried first)
  • 2 cups pumpernickel flour
  • 2 eggs
  • ¼ cup chopped raw peanuts
  • ½ cup shredded dried coconut
  • ½ cup dried cranberries
  • ½ cup brown sugar
  • ¼ cup honey
  • 1 tablespoon raw vanilla powder or vanilla extract
  • ¼ cup finely minced peeled ginger
  • ⅓ cup avocado oil (or another suitable baking oil)
  • Kiwi slices for decoration

Method

  1. Preheat the oven to 450 °F (230 °C).
  2. Mix the almond pulp, flour, eggs, peanuts, coconut, cranberries, brown sugar, honey, vanilla, ginger, and avocado oil until well combined.
  3. Grease a baking tray or dish with a little oil. Spread the dough evenly — no thicker than about ½ inch (1 cm).
  4. Score the surface with a knife to mark cake sizes for even baking and easy cutting.
  5. Bake at 450 °F for the first stage, then reduce the oven to 325 °F and bake for about 40 minutes.
  6. Turn off the oven and let the cakes sit inside for another 5–10 minutes.
  7. Allow them to cool completely before cutting. Decorate with kiwi slices.

Fresh almond pulp is perishable — use it the same day, refrigerate for up to two days, or dry it thoroughly in a low oven before storing. Discard immediately if it smells sour or shows any mould.

Storage and Allergy Notes

This recipe contains eggs, honey, peanuts, almonds, and gluten (pumpernickel flour). It is vegetarian but not vegan. Store the cooled cakes in an airtight container in the refrigerator for up to five days. They also freeze well — wrap individually and thaw at room temperature.

Avocado oil adds a neutral flavour and holds up well at baking temperatures. You can substitute it with melted coconut oil or any other oil suitable for baking.

Frequently Asked Questions

Can I use store-bought almond flour instead of fresh almond pulp?

You can, but the texture will differ. Fresh or dried almond pulp retains more moisture and gives a chewier result. Store-bought almond flour is drier and finer, so you may need to reduce the flour slightly and add a tablespoon of water to keep the mixture from crumbling.

What can I substitute for pumpernickel flour?

Whole wheat flour or spelt flour works well as a substitute. They change the flavour slightly but keep a similar dense, hearty texture. For a gluten-free version, try oat flour (certified GF) and adjust the liquid as needed.

Can I leave out the ginger?

Yes. The ginger adds warmth and fragrance, but it is not essential. You could replace it with a teaspoon of cinnamon or cardamom, or omit it entirely for a more neutral cake.

Is this recipe suitable for children?

It contains peanuts, almonds, eggs, and honey, which are common allergens. Always check for allergies before serving to children. The recipe is not suitable for infants under 12 months due to the honey.

Can I make these vegan?

To make a vegan version, replace the eggs with flax eggs (1 tablespoon ground flaxseed + 3 tablespoons water per egg, rested for 5 minutes) and substitute maple syrup for the honey. The texture may be slightly less firm.
